How to Make Waffles from Scratch
STEP ONE: In a measuring cup, measure the milk and stir in the lemon juice. Let this mixture sit for 5-10 minutes. While the milk sits, use a stand or hand mixer to beat the egg whites until stiff peaks form, then set this aside.
STEP TWO: In a large bowl combine the flour, butter, brown sugar, baking powder, salt, egg yolks, vanilla, and the lemon-milk mixture. Mix well.
STEP THREE: Fold the egg whites into the batter until just combined.
STEP FOUR: Preheat a waffle iron and coat it with vegetable oil, non-stick spray, or butter. Spoon the batter onto the waffle iron, spreading it evenly. Cook the waffles until golden brown and repeat with the remainder of the batter.

Ingredients
- 1 ¾ cup milk (2% or whole)
- 1 tablespoon lemon juice or white vinegar
- 2 large eggs separated
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter melted
- 1 tablespoon light brown sugar packed
- 1 teaspoon vanilla extract
- Butter for serving
- Maple syrup for serving
Instructions
Pour the milk into a bowl or glass measuring cup. Stir in the lemon juice. Let stand for 5-10 minutes at room temperature to make sour milk.
Beat the egg whites in a medium mixing bowl with a mixer on high speed until stiff peaks form. Do not overbeat. Set aside.
In a large mixing bowl, whisk together the flour, baking powder, salt, sour milk, egg yolks, melted butter, brown sugar, and vanilla until well combined.
Use a rubber spatula to gently fold in beaten egg whites.
Preheat a waffle iron and spray the plates with non-stick cooking spray. Spoon about 3/4 cup of batter onto the waffle iron, spreading it out towards the edges.
Close the lid and cook until golden brown. Remove from the iron and butter immediately. Repeat until all of the batter has been. Serve warm with maple syrup.
